Buffalo Chicken Egg Rolls

I was browsing through wordpress blogs about 2 weeks ago and stumbled upon a recipe for Buffalo Chicken Egg Rolls. I love the texture of egg rolls but usually do not eat them because they leave you feeling gross & a little sick to your stomach after the indulgence is over. So when I saw this recipe I had to give it a try.

The tutorial for this recipe is very specific with measurements & all the steps to take to make these yummy rolls! I did not follow the recipe exactly the way she instructs, just because it is faster to just guess. ha!

To make Buffalo Chicken Egg Rolls you will need: 

  • Buffalo Wing Sauce (I love Sweet Baby Ray’s)
  • Egg Rolls (in the produce area near the organic lettuces & such)
  • 2 large chicken breast to make 10 rolls (cooked & shredded)
  • cole slaw
  • blue cheese
  • cooking spray
  • ranch for dipping
Once you shred your chicken pour enough buffalo wing sauce to coat the chicken (be aware of how spicy your sauce is before you pour too much sauce over your meat)
Next lay out 4 or 5 egg roll wrappers onto your work surface and place about 1 1/2 tablespoons of your chicken & sauce mixture diagonally into the middle of your roll. Do it at a diagonal for an easy roll up later. Place 1/2 tablespoon of blue cheese into each of your rolls followed by a small handful of cole slaw.
 The amount of cheese & cole slaw you put into your rolls is totally up to you! I am not the biggest fan of blue cheese (although I like a small amount) so I didn’t put as much in mine. However, Johnny wanted a lot more in his.
Next comes the really fun part! Rolling up your Yummy Rolls!
I worked at Freebirds when I went to Texas State & I just went with that method of rolling up the rolls!
Fold over two sides to meet in the middle… but not touching..
Bring the Bottom Point over the roll & tuck tightly under neath the other side.
Then Repeat these steps to make wrap up the rest of your rolls.
Once your rolls resemble the picture above (looks like a burrito mailing envelope ha!) then grab a tiny cup of water to seal them up!
Get your finger tip wet and run over the edges of the roll that is not yet wrapped up. This will seal it to the rest of the roll that is wrapped up.
Spray your cooking spray onto your baking pan, line up your rolls, spray each of the rolls with a little cooking spray (for a crunch), then pop in the oven for 13-16 minutes on 350 degrees.
Enjoy with some ranch dipping sauce!
A perfect way to store egg roll wrappers are in mason jars! Of COURSE!

notice the garlic salt shaker & the puffs on the floor. lol. luckily this is a quick meal… especially if you make your chicken in advance (i do!)
